In a large bowl beat pudding mix and milk with a mixer on medium-high speed for 2 - 3 minutes until thickened. Transfer the pudding to a medium bowl and set aside. No need to wash out the mixing bowl for the next step.

In the same mixing bowl add whipping cream and beat on high speed until stiff peaks form, about 3 minutes. Fold the pudding into the whipped cream and gently mix with a spatula to combine.

To assemble the layers, lightly grease the bottom and sides of a 9 x 9” glass or ceramic baking dish. Line the bottom of the dish with about 5 sheets of graham crackers, breaking up some pieces to fill in spaces. Gently spread half of the pudding-cream mixture over the crackers.

Place a second layer of about 5 graham crackers over the pudding-cream filling. Gently spread the remaining half of the pudding-cream mixture over the crackers.

Place a third layer of about 5 graham crackers over the pudding-cream filling. Set aside while preparing the ganache.

Meanwhile, make the chocolate ganache topping. In a small saucepan, add chocolate chips and butter. Heat gently over medium heat, stirring often until the chocolate is completely melted, smooth and glossy.

Immediately spread the warm chocolate ganache over the top of the last graham cracker layer spreading it right to the edges. Refrigerate for a few hours or overnight to allow the chocolate to set and the graham crackers to soften. Reserve the marshmallows for the finishing garnish when fireside.

When ready to serve, head out to the fire pit with those marshmallows and some skewers, and let everyone roast their own marshmallows to top off the dessert. Cut into 9 square servings.
