    I recently received a copy of Julia Konovalova’s The Ultimate One-Pan Oven Cookbook and made her Spicy Blackened Chicken Legs with Sweet Potatoes and Broccoli recipe. It has just the right amount of blackened seasoning mix that takes the chicken over the top. The entire meal, including the sweet potatoes and broccoli, bakes in the oven on one sheet pan leaving minimal cleanup!

    Recently while I was busy in my kitchen baking pies, the doorbell rang. With hands covered in flour, I was reluctant to answer. But I’m glad I did as it was a courier delivering Julia's cookbook, released on August 28, 2018. I signed for the delivery (likely leaving flour residue on the courier's electronic signature pad) and quickly opened the packaging to get my first glimpse of Julia’s beautiful book.

    With 75 tantalizing recipes, there are plenty of options for easy one-pan oven recipes. From breakfast to dinner to desserts and everything in between, there are recipes that will please vegetarians, fish and/or meat eaters, plus anyone with a sweet tooth! 

    The recipes are easy to assemble using fresh and healthy ingredients. Simply pre-heat the oven and everything bakes in a sheet pan, baking dish, Dutch oven or roasting pan. This makes dinner so convenient for anyone with a busy lifestyle who needs a complete meal on the table fast and with only one pan to clean up! This book is definitely one that should be in every busy cook’s kitchen.

    Each chapter starts with an introduction about what’s ahead, while every recipe comes with simple directions, colourful photos, and Julia’s personal stories and clever tips. Her photography is incredible and the enticing photos will inspire you to make the recipe even before you even read it! The book is easy to use and you’ll appreciate the lay-flat binding that stays open at whatever page you need, making it a delight to cook from.

    Recipe Review: Spicy Blackened Chicken Legs with Sweet Potatoes and Broccoli

    I’m typically not a fan of chicken legs as I usually prefer to cook a whole chicken or chicken breasts. But when I read Julia’s recipe for these blackened chicken legs, they looked so tempting I knew I had to try them out!

     
    Spicy Blackened Chicken Legs

     

    Julia’s recipe is a take on the famous jerk chicken many of us love. The recipe includes chicken, sweet potatoes and broccoli – all ingredients and flavours that are popular with my family. Julia concocted a blackening marinade that contains just the right amount of every-day pantry seasonings to achieve this perfect mouthwatering one-pan family dinner. My family loves spicy food so I went with the full amount of cayenne pepper!

    The chicken caramelizes while it bakes and comes out of the oven with a crispy blackened crust full of flavour. The succulent pan juices that flow out of the chicken while it bakes are spicy while slightly sweet. As Julia recommends, the pan juices are enjoyed drizzled over the lightly browned sweet potatoes and roasted broccoli that cook on the pan with the chicken.

    It’s amazing how this flavourful chicken dinner covers an array of food groups and is baked and served on one sheet pan! My family loved it and I will definitely be making this recipe again and again.
