    Guacamole

    Who doesn’t love dipping a crisp tortilla chip into a bowl of freshly made Mexican guacamole? It makes everyone happy knowing they’re eating something delicious that’s so good for you. Avocados contain healthy fats and are packed with heart-healthy nutrients. It’s always nice when something healthy is so enjoyable to eat!

    Avocado trees naturally bloom four times a year in Mexico. Thankfully, lots of avocados are imported to Canada giving us access to an abundance of them all through the year. I don’t think I could live without avocados. It’s not only for the guacamole – but I use avocados for many other dishes too, in fact, almost on a daily basis!

    This guacamole is super simple to make, has few ingredients and comes together quickly. The diced tomato adds an acidic fruitiness, the lime juice adds a zing and the jalapeño provides a kick. You can mash the avocados to a lumpy or smooth texture, whichever you prefer. I kind of like mine on the chunky side, but that’s just me.

    It can be tricky to find avocados in the store that are ready to eat so a little advance planning might be necessary. Use ripe avocados to make this dip and serve the dip within a few hours the same day it’s made.

    Guacamole

    Ingredients

    • 2 large ripe avocados
    • 1 tablespoon freshly squeezed lime juice
    • 2 sprigs green onions white and green parts, sliced finely
    • 2 small Roma tomatoes seeded and small diced
    • 1 jalapeño seeded and finely chopped (optional)
    • 1 garlic clove crushed
    • ½ teaspoon kosher salt
    • ½ teaspoon ground cumin

    Instructions

    1. Cut avocados in half and remove the pits. Spoon out the flesh into a medium bowl and sprinkle with lime juice.
    2. Mash avocados with a fork to achieve a lumpy or creamy consistency, as desired.
    3. Fold in green onions, diced tomato, jalapeño pepper, garlic, salt and cumin.
    4. Mix gently to combine. Transfer to a serving bowl. Serve immediately or cover and chill the dip for 1 hour.
